No-Mayo Cole Slaw

This oil-and-vinegar slaw uses purchased coleslaw mix (with shredded cabbage & carrots in a bag) and gives an option of using sugar-substitute.
Ingredients
- 1 bag coleslaw mix
- 1 sweet onion, diced
- 3/4 cup sugar (or equivalent amount of sugar substitute such as Splenda or Equal)
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup white vinegar
- 3/4 cup oil

Method
In a heat-proof bowl, combine slaw mix and onion. Bring vinegar, salt, pepper, and sweetener to a boil. Pour over onion and cabbage. Stir to combine. Cool. Let chill at least 4 hours.
Notes: Great to take along for luncheons and picnics.
