No-Fat All-Fun Dill Potato Salad

Cubed red potatoes, cucumbers, onion, and nonfat yogurt are mixed for this salad. Garlic, dillweed, salt and pepper are added for flavor.
 

Ingredients

  • 4 cups cubed and cooked red potatoes (with skins on), drained and cooled
  • 1/2 to 1 cup cucumber, peeled, seeded and chopped
  • 1/2 cup plain nonfat yogurt
  • 1/4 cup finely chopped onion
  • 1 to 2 tsp dillweed
  • 1 Tbsp finely chopped garlic
  • Salt and pepper

Method

Mix all ingredients and add salt and pepper to taste. Keep chilled.

 

Notes: Cool potatoes before mixing all ingredients.
