My Mama's Salad

Torn romaine is the base for this tossed salad, with pitted black olives, artichoke hearts, tomato, red onion, blue cheese, and avocado slices. An oil and vinegar dressing is poured over all.
Ingredients
- Salad:
- 1 head romaine lettuce, washed, drained and torn
- 2/3 (15 ounce) can pitted black olives, drained
- 1 14 ounce can quartered artichoke hearts, drained
- 3 roma tomatoes, chopped
- 1/4 red onion, thinly sliced
- 1/4 cup crumbled blue cheese
- 1 avocado, sliced
- Dressing:
- 1/2 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Method
Place the cleaned lettuce into a large bowl. Top with the rest of the salad ingredients. Make dressing in a food processor or small bowl with a whisk. Pour desired amount of dressing over salad; toss.
Notes: My mother made this salad for us every night.
