Mom's Apple Salad


Diced apples, raisins and chopped walnuts are tossed with cinnamon, nutmeg, and Miracle Whip to make this easy salad.



Ingredients:

  • 4 Golden Delicious Apples, cored and diced
  • 1/2 Cup raisins
  • 1/2 Cup chopped walnuts
  • 1/2 Cup Miracle Whip (Light)
  • 1 Tablespoon of fresh lemon juice
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch of salt

Method

Begin with the apples, cored and diced. In a medium mixing bowl, add the apples and the lemon juice and toss to coat the apples in the juice. This will prevent the apples from browning. Add the raisins, walnuts, cinnamon and nutmeg to the bowl. Begin with 1/2 cup of Miracle Whip Light and mix ingredients. Depending on the size of the apples, you may need to add 1 to 2 tablespoons more of Miracle Whip Light to the salad to create a creamier taste. Add salt to taste and chill at least 1 hour before serving.

Notes: This recipe is simple, but delicious. My mother used to make it when I was little and I always thought it was made with diced potatoes! I tried to make this when I moved away to college and couldn't figure out why it tasted so bad. One day I asked her what her secret was and she said it was the lemon juice. I said I thought adding lemon juice to potatoes was a terrible idea. I think she laughed for 10 minutes at my mix up, but thanks to a little advice, I now make the best apple salad with APPLES, not potatoes! I have now named it Mom's Apple Salad so I will never be confused again!
