Lentils and Feta

Green (or brown) lentils are cooked and combined with traditional Greek flavors of mint, olive oil, and feta cheese.
Ingredients
- 2 c. cooked green lentils
- 2 tbsp. lime juice
- 1 tbsp. minced fresh mint
- 2 tsp. olive oil
- 1/4 tsp. salt
- pinch fresh black pepper
- 2 tbsp. crumbled feta cheese

Method
Combine all ingredients except feta and marinate at least 30 minutes at room temperature. Add feta just before serving.
