Lemony Pine Nut Salad

Chopped romaine lettuce is tossed with toasted pine nuts, Parmesan and croutons, and a dressing of olive oil and lemon juice.
Ingredients
- Romaine lettuce, chopped
- 1/4 cup pine nuts
- 2 garlic cloves, crushed
- 2 lemons, squeezed
- 1/4 cup olive oil
- 10 drops Tabasco sauce
- 1/4 cup grated Parmesan
- 1/2 tsp sugar
- Pepper
- Croutons, optional

Method
Toast pine nuts in a dry pan just until golden brown, then allow to cool. Combine oil, sugar, garlic, Tabasco, pepper and lemon juice to make dressing. Just before serving toss together dressing, nuts, romaine, cheese & croutons (if using.)
