Lemon-Rosemary Marinade

Rosemary leaves are whirled in the blender with oil to flavor the oil. That's then combined with lemon peel and juice, garlic and salt for use as a marinade for poultry or pork.
 

Ingredients

  • 1/2 cup lightly packed fresh rosemary leaves
  • 2/3 cup olive oil
  • Grated zest and juice of 2 lemons
  • 3 cloves of garlic
  • 1 teaspoon kosher salt

Method

In a blender, puree rosemary leaves with oil. Let mixture steep for 5-10 minutes, then strain, pressing down on solids with back of large spoon. Return oil to blender, discarding leaves. Add remaining ingredients and puree until smooth. Use as a marinade for chicken, poultry and pork.

 

Notes:

 

Number of Servings: 1 1/4 cup marinade.
