Kitchen Sink Salad

An assortment of ingredients (everything but the kitchen sink) is added to lettuce, spinach & other veggies, chilled and tossed to serve.
 

Ingredients

  • 1/2 cup sliced cherry tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chick peas (garbanzo beans)
  • 1/4 cup chopped walnuts
  • 1/4 cup raisins
  • 1/8 cup (2 Tbsp) sunflower seeds
  • 1/2 bag fresh baby spinach leaves
  • 1 bag baby spring mix lettuces or desired lettuce
  • 1/4 cup raw broccoli cut into small pieces
  • 1/3 cup fresh or canned cut green beans
  • 1/3 cup canned whole kernel corn
  • Optional: chopped cooked chicken or ham (may use cold cuts)

Method

Add first 6 ingredients in order in layers into a small sealable container. In a larger bowl layer the rest of the ingredients. Cover and chill. When ready to serve, open containers and invert smaller bowl onto greens in the larger bowl. Toss. (For a main dish, add the chopped chicken or meat.)

 

Notes: Can be made the day before if placed in 2 sealed containers like Tupperware(first 6 ingredients in one and the rest in another larger container). Just add the first six ingredients onto the greens at time of serving. Add optional meat last on top. No dressing necessary due to variety of tastes involved.
