Joan's Mandarin Orange Salad

This variation of a favorite recipe combines cottage cheese, dry orange Jell-O, crushed pineapple, mandarin oranges and tiny marshmallows. Cool Whip topping is folded into the mixture before it's chilled.
 

Ingredients

  • 12 oz. cottage cheese
  • 1 large pkg. dry orange Jell-O
  • 1 20 oz. can crushed pineapple (drained)
  • 2, 11 oz. cans mandarin oranges (drained)
  • 2 1/2 c. mini-marshmallows
  • 1 16 oz. container Cool Whip, partially thawed

Method

Mix together in a large bowl the cottage cheese and dry Jello. Add the crushed pineapple, mandarin oranges and marshmallows. Fold in the Cool Whip. Put into a pretty bowl for serving. Cover with plastic wrap.

 

Notes: This is a fruity salad that goes great with ham, chicken or lamb. Recipe can be made the night before and served the next day. To celebrate spring and summer with a festive touch, pastel colored mini-marshmallows can be used.
