Jicama Orange Salad

Torn butter lettuce, sticks of jicama, orange and avocado, red onion slices and goat cheese are tossed together in a homemade vinaigrette made with red wine vinegar, lemon juice, garlic and olive oil.
Ingredients
- Vinaigrette:
- 4 Cloves Garlic, peeled, and chopped fine
- 1 tsp Dijon mustard
- 1/2 cup Olive oil
- 4 Tbsp Red wine vinegar
- 2 Tbsp Lemon juice
- 1/2 tsp Salt
- Freshly cracked black pepper, to taste
- Salad:
- 1 head Butter lettuce, washed and torn into bite-sized pieces
- 1/2 med-large Jicama, peeled and sliced and julienne
- 1 large Orange, peeled and sliced into chunks
- 1 large Avocado, peeled and cubed
- 1/2 med. Red onion, halved and very thinly sliced
- 2-4 oz. Goat cheese, cubed
- Fresh cracked pepper

Method
In a large wooden salad bowl whisk all the vinaigrette ingredients together well. Just before serving, add all salad ingredients to vinaigrette mixture and toss well, adding more fresh cracked pepper to taste.
Notes: Herbed goat cheese or feta cheese may be substituted.
