It Takes Two To Mango Salad

Cubes of mango are tossed with chopped tomato, cucumber, black beans and corn, with a cilantro-jalapeno dressing, served on a bed of bibb lettuce.
Ingredients
- 2 large ripe mangoes, cubed
- 2 tomatoes, chopped
- 2 heaping tablespoons canned black beans
- 2 heaping tablespoons canned whole kernel yellow corn
- 1/2 cup cucumber, chopped
- 2 tablespoons white vinegar
- 1 teaspoon sugar
- 1/2 cup chopped cilantro
- 1 jalapeno pepper, seeded & finely chopped
- 1 small purple onion, chopped
- 1 or 2 heads of bibb lettuce

Method
Mix all ingredients together except lettuce. Spoon mixture over lettuce to serve.
Notes: It is important you purchase mangoes that are ripe.
