Hurricane Black Bean Salad

Canned black beans, whole kernel corn, & pineapple chunks are flavored with black bean salsa, lime juice & cilantro.
Ingredients
- 1 15 ounce can black beans, drained
- 1 15 ounce can whole kernel corn, drained
- 1/2 jar (Newmans Own) black bean salsa
- Juice of 2 limes
- 1 8 oz can pineapple chunks or tidbits, in juice
- 1 small bunch cilantro, chopped

Method
In a large bowl combine black beans, corn, salsa, lime juice, pineapple with its juice, and cilantro to taste. May be eaten immediately, but best if it can be chilled overnight.
Notes: This recipe is called Hurricane Black Bean Salad because it uses ingredients we usually have on hand when a hurricane has hit our South Florida home, there is no electricity, and we are seeking creative tasty meals from the pantry or what fresh food remains after the power goes out.
Number of Servings: 6-8 as side dish
