Hurray-For-Spinach Asian Salad


Torn spinach is tossed with sliced mushrooms, grapefruit, water chestnuts, and a dressing of rice wine vinegar, olive oil, soy sauce and grapefruit juice.



Ingredients:

  • 10 ounces fresh spinach, torn  
  • 1/4 pound fresh mushrooms, sliced
  • 2 grapefruit, sectioned and cut up
  • 1 5-ounce can water chestnuts, drained and chopped
  • 1/4 cup olive oil
  • 3 tablespoons rice wine vinegar
  • 2 tablespoons grapefruit juice
  • 1 tablepoon soy sauce
  • 1/4 teaspoon bottled hot pepper sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon dry mustard
  • 1 teaspoon sugar

Method

Wash and drain spinach; place in a large bowl. Add mushrooms, water chestnuts, and grapefuit. Mix the remaining ingredients in a small bowl with a whisk. Add and toss with spinach.
