Honey BBQ and Pineapple Chicken Salad

Chicken nuggets are baked & tossed with a mixture of ketchup, brown sugar, & liquid smoke, then served on lettuce with pineapple chunks.
 

Ingredients

  • Frozen chicken nuggets (about 16-24 chunks)
  • 1, 15 oz. can pineapple chunks, drained
  • 2 tbsp honey
  • 1 small onion, minced
  • 2 cups ketchup
  • 1-2 tsp Liquid Smoke
  • 1 cup packed brown sugar
  • 1/2 tsp garlic powder
  • 1 pkg lettuce salad mix

Method

Bake chicken chunks as directed on package until hot and crispy. In a mixing bowl combine onion, honey, Liquid Smoke, brown sugar, garlic powder, & ketchup; stir well. Place lettuce mix on serving plates; sprinkle a few pineapple chunks on top of each. Toss chicken chunks with about HALF of the honey-BBQ sauce mixture to coat all pieces. Allow 4-6 pieces per salad, depending on size of chunks. Drizzle salad with remaining sauce and serve warm.

 

Notes: You can add croutons or lo mein noodles for extra crunch.
