A mixture of arugula, watercress, mint, basil, oranges, tomato & avocado is dressed with a lime vinaigrette. Add shrimp for a main dish salad.
Combine all vinaigrette dressing ingredients in a small saucepan; gently heat and stir until mint jelly dissolves. Whisk to blend and set aside. Use dressing when it is at room temperature.
In a large mixing bowl mix all salad ingredients except avocados. Dress lightly with some of the vinaigrette. Place on individual chilled salad plates. Slice avocado into long slices. Dip each avocado into vinaigrette remaining in salad bowl. Arrange slices on top of salads.
Notes:
Please don't be put off by the salad dressing ingredients. I made it up almost by accident and it's become a family and guest favorite.
Several large shrimp could garnish the salad, if desired, or to make it a main course.
