Herbed Salad with Spicy Lime Vinaigrette

A mixture of arugula, watercress, mint, basil, oranges, tomato & avocado is dressed with a lime vinaigrette. Add shrimp for a main dish salad.
Ingredients
- Vinaigrette:
- 1 tablespoon red wine vinegar
- 2 tablespoons lime juice
- 1 tablespoon lime zest
- 1 tablespoon mint jelly
- 1/4 cup olive oil
- 1/4 cup vegetable oil
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- Salad:
- 6 cups watercress
- 1 bag washed baby arugula
- 1/3 cup torn basil leaves
- 1/3 cup torn mint leaves
- 3 medium oranges, peeled, pith removed, segments cut into thirds
- 1 sweet onion (Vidalia), diced
- 1 cup cherry tomatoes, halved
- 2 ripe Hass avocados

Method
Combine all vinaigrette dressing ingredients in a small saucepan; gently heat and stir until mint jelly dissolves. Whisk to blend and set aside. Use dressing when it is at room temperature. In a large mixing bowl mix all salad ingredients except avocados. Dress lightly with some of the vinaigrette. Place on individual chilled salad plates. Slice avocado into long slices. Dip each avocado into vinaigrette remaining in salad bowl. Arrange slices on top of salads.
Notes: Please don't be put off by the salad dressing ingredients. I made it up almost by accident and it's become a family and guest favorite. Several large shrimp could garnish the salad, if desired, or to make it a main course.
