Healthy Lentil Salad

Cooked lentils, chick peas (garbanzo beans), black olives, tomatoes, red sweet pepper and carrot are dressed with olive oil and chilled.
 

Ingredients

  • 3 cups cooked lentils
  • 1 cup cooked chick peas or garbanzo beans
  • 10 cherry tomatoes, sliced
  • 1/2 cup sliced black olives
  • 1/2 cup chopped red bell pepper
  • 1/2 cup shredded carrot
  • 2 basil leaves, chopped
  • 1/2 cup olive oil
  • Salt and pepper to taste

Method

Mix all ingredients together; refrigerate until cold.
