Green Bean Salad

Canned green beans are combined with tomatoes, onion, pickle and hard cooked eggs, and moistened with mayonnaise.
 

Ingredients

  • 1 15 oz. cans cut green beans, well drained
  • 2 fresh tomatoes, seeded and chopped
  • 1/4 of a small white onion, diced fine
  • 1/2 pickle, diced fine
  • 2 1/2 cups fat-free mayonnaise (as needed)
  • Salt and pepper to taste
  • 2 hard-cooked eggs, cooled and diced

Method

Allow the chopped tomatoes to drain on paper towels. In bowl combine tomatoes, green beans, onion, and pickle. Add desired amounts of mayonnaise, salt and pepper; mix together. Fold in diced hard-cooked eggs and chill for 30 minutes.
