This chilled cheese tortelini pasta salad has chunks of seasoned and grilled chicken, olives, veggies and feta, drizzled with dressing.
Cook pasta as per directions on package. Rinse with cold water and drain thoroughly. Place in large salad bowl, add chopped cucumber, tomato, red onion, and olives. Toss together gently. Refrigerate for one hour. Add enough salad dressing just to coat and refrigerate for several hours before serving.
Notes:
I make this salad as a side dish for potlucks or as a nice summer main dish.
