Greek Pasta Salad

Orzo pasta with a mix of roasted vegetables and feta cheese--tastes great warm or cold.
 

Ingredients

  • 1/2 red onion
  • 2 zucchini
  • 2 eggplant
  • 2 summer squash
  • 1/2 box orzo pasta
  • Sea salt and freshly ground black pepper to taste
  • 1/4-1/3 cup feta cheese, optional
  • 3 tbsp extra virgin olive oil

Method

Preheat oven to 450 degrees. Bring a pot of water to a boil. Heat a large skillet on medium heat. Chop all vegetables into 1/2-1 inch cubes. Place oil in skillet and add chopped vegetables. Cook 10-12 minutes or just until knife is inserted easily. Place orzo in boiling salted water and cook until al dente. Remove vegetables from skillet and place on baking sheet. Season with salt and pepper. Bake for 20 minutes. Mix vegetables and pasta in a bowl and top with feta.

 

Notes: Serve either warm or cold.
