Greek Orzo Salad

This Greek pasta salad is topped with colorful vegetables and Italian dressing. Make it as a side dish for your next function or picnic.
Ingredients
- 1/2 c uncooked orzo
- 1 c chopped green pepper
- 1 c chopped cucumber
- 15 oz can chickpeas, drained
- 1/3 c sliced black olives, drained
- 1 1/2 c chopped cherry or grape tomatoes
- 1/2 c bottled Italian dressing

Method
Cook pasta according to package directions; drain, rinse and cool. Add remaining ingredients. Refrigerate for 1-2 hours to blend flavors. Serve with an optional sprinkling of crumbled feta cheese.
