Greek Caprese Salad

Basil-sprinkled slices of feta cheese placed on tomato slices are drizzled with balsamic vinegar & olive oil in this red-white-and-green salad.
Ingredients
- 4 ripe medium tomatoes
- Salt (to taste)
- Freshly ground black pepper (to taste)
- 12 oz block feta cheese, not in brine
- Fresh basil leaves
- 4 Tbsp. extra virgin olive oil
- 4 Tbsp. aged balsamic vinegar

Method
Quarter tomatoes and thinly slice. Divide tomato slices evenly among four salad plates. Sprinkle tomato slices with desired amount of salt and pepper. Slice feta into 8 slices. Top each plate of tomato slices with 2 slices of feta cheese. Roll basil leaves into a tight cyliner and slice crosswise into thin strips to make about 1/2 cup. Sprinkle basil evenly atop each salad. Drizzle 1 Tablespoon of olive oil and 1 Tablespoon of vinegar over each salad. Sprinkle each salad with additional salt and pepper, if desired.
Notes: This is a great way to enjoy your beautiful summer tomatoes.
