Gazpacho Salad Bowl


Healthy, quick and delicious. This salad screams "fresh from the garden!"



Ingredients:

  • Salad:
  • 2 large garden tomatoes (1 lb)
  • 1 large garden cucumber
  • 1 medium green pepper, sliced into rings
  • 1/2 cup sliced onion, separated into rings
  • Snipped chives
  • Fresh snipped flat Italian parsley
  • Tortilla chips to serve as croutons
  • Dressing:
  • 1/3 cup olive oil
  • 1/3 cup red wine vinegar
  • 1 Tbsp snipped chives
  • 1 clove garlic, crushed
  • 1 tsp salt
  • 1/4 tsp cracked black pepper
  • Drops of liquid hot red pepper seasoning, to taste

Method

Make salad dressing first by putting all salad dressing ingredients into a lidded jar. Shake vigorously and combine ingredients. Peel tomatoes and slice. Cut each tomato slice in half. Score washed unpared cucumber with a fork and slice into thin discs. In a salad bowl combine tomato, cucumber, green pepper, onion and dressing. Toss until vegetables are well coated. Refrigerate covered until well chilled, about 1 to 2 hours. Just before serving, toss salad and sprinkle with more chives. Serve with tortilla chips as croutons.
