Gayla's Pears and Chevre

Torn assorted leafy greens are arranged on a salad plate with sliced pears, walnuts, chevre cheese and green onions, then drizzled with a raspberry vinaigrette made of raspberry vinegar, sugar, oil, mustard, and grated onion.
Ingredients
- SALAD
- 4 Cups torn fancy lettuces
- 2 red D'anjou pears, sliced thin (I also use red Bartlett)
- 1/2 Cup walnuts, chopped coarsely and toasted
- 1/2 Cup Chevre cheese, crumbled
- 1/2 Cup thinly sliced green onions with tops
- Raspberry Vinaigrette:
- 1/2 Cup sugar
- 2 tsp. Dijon mustard
- 1/2 tsp. salt
- 2/3 Cup raspberry vinegar
- 2 Tbsp. grated onion
- 2 Cups canola oil

Method
On individual salad plates arrange lettuce, walnuts, cheese and green onion. For Vinaigrette, combine remaining ingredients in shaker jar. Drizzle salad with dressing. (Dressing can be made ahead and stored in refrigerator.)
