This delicious and healthy salad is full of flavor form the fruit to the dressing. The almonds give it a great crunch and the dressing is just sweet enough.
In a blender place sliced banana, pineapple juice, peach syrup, yogurt, sugar and almond extract. Blend until smooth. Store in a covered container and chill in refrigerator for later use. Shake before using.
On a large platter layer mixed greens then place pineapple rings alternately with cantaloupe wedges in an outside circle on top of greens.
In a large bowl combine mandarin oranges, strawberries and peaches. Layer fruit mixture in center of platter then sprinkle with almonds.
Pour dressing on top.
