Fruit Salad with Almond Yogurt Dressing

This delicious and healthy salad is full of flavor form the fruit to the dressing. The almonds give it a great crunch and the dressing is just sweet enough.
Ingredients
- 6 cups mixed salad greens torn into bite sized pieces
- 1 (15 1/2 oz) can pineapple rings, reserve liquid
- 1/2 medium sized fresh cantaloupe, peeled seeded and cut into thin wedges
- 1 medium sized can mandarin orange sections, drained
- 1/2 cup fresh strawberries, cleaned and halved
- 1 8 oz can peaches, liquid reserved
- 1/3 cup slivered almonds
- For Dressing:
- 1 large banana, sliced
- 1/3 cup (from reserved above) pineapple juice
- 1/4 cup (from reserved above) peach syrup
- 1/4 cup plain yogurt
- 1 tbsp sugar
- 1/8 tsp almond extract

Method
In a blender place sliced banana, pineapple juice, peach syrup, yogurt, sugar and almond extract. Blend until smooth. Store in a covered container and chill in refrigerator for later use. Shake before using. On a large platter layer mixed greens then place pineapple rings alternately with cantaloupe wedges in an outside circle on top of greens. In a large bowl combine mandarin oranges, strawberries and peaches. Layer fruit mixture in center of platter then sprinkle with almonds. Pour dressing on top.
