Frozen Dessert Salad

A creamy, frozen salad made with fruit cocktail, pineapple, bananas, maraschino cherries and miniature marshmallows.
 

Ingredients

  • 1 8 oz can fruit cocktail
  • 1 envelope Knox gelatin
  • 1 4 oz can crushed pineapple
  • 12 maraschino cherries
  • 1 banana
  • 1 cup miniature marshmallows or 10 marshmallows torn into smaller pieces
  • 1/2 pint whipped cream
  • 3 tbsp mayonnaise

Method

Soak gelatin in 1/2 cup juice from fruit cocktail. Place over low heat to melt in small pot. Pour into 8 x 8 freezer safe dish or pan. Stir in fruit cocktail, pineapple, cherries, bananas, and marshmallows. Place in freezer and partially freeze to slushy stage, about 15 minutes. Remove from freezer and mix slush with 1/2 pint whipping cream, whipped to firm peak stage, and 3 tablespoons mayonnaise. Mix together and return to freezer. Freeze fully and serve as a salad.

 

Notes: This is a popular salad to serve at family picnics and parties that include the kids.
