Fritos Salad

Black beans, green onion, green pepper, tomatoes and corn, plus olives (if desired) are tossed with Fritos corn chips and Catalina dressing.
 

Ingredients

  • 1 bunch green onions, sliced
  • 1 large green pepper, sliced
  • 3-4 tomatoes, cut into small pieces
  • 1 large or 2 small cans black beans, rinsed and drained
  • 1 can whole kernel corn
  • Olives (optional)
  • 1 bag regular Fritos chips (not the Scoops)
  • Catalina dressing (I use Kraft FREE and it tastes fabulous)

Method

Combine, green onions, green pepper, tomatoes, black beans, corn and olives in a mixing bowl. Carefully stir them all together. RIGHT before you serve, stir in Fritos and pour the Catalina dressing on top, toss, then add more dressing. Put just enough dressing to cover. Eat quickly, because the chips will be soggy within the hour! Don't worry, I've NEVER had leftovers!
