A Greek inspired vegetable salad with tomatoes, cucumbers, red onion, feta and mozzarella cheese with a lemon flavored vinaigrette.

  • Servings: 6-8


3-4 Roma Tomatoes
1 Cucumber, peeled and seeded
½ Medium Red Onion, sliced thin
6 oz Part Skim Mozzarella Cheese
4 oz Feta Cheese
¼ cup Fresh Basil, roughly chopped
2 Tbsp Fresh Italian Parsley, chopped
2-3 cloves Garlic, minced
¼ cup Olive Oil
2 Tbsp Lemon Juice
1 Tbsp Red Wine Vinegar
1 Tbsp Fresh Ground Pepper
1 tsp Oregano
1 tsp Thyme
1 tsp Garlic Powder


Cut tomatoes and cucumber in 1 inch chunks and place in large bowl. Add sliced onions, garlic, basil and parsley to bowl. Cut mozzarella and feta cheese into 1/2 inch pieces and add to bowl. In small bowl whisk together remaining ingredients. Add dressing to large bowl and stir until well blended.
