Fresh greens with feta and cashews with a dijon mustard and balsamic vinegar dressing.
Put lettuce in large salad bowl. Lift and toss lettuce to evenly mix in feta and cashews.
Put next five ingredients in food processor fitted with a steel blade and process for one minute.
With processor running, slowly add oil in a slow steady stream until evenly blended.
Pour dressing over salad, toss, repeat.
Notes:
You can add more or less of the cashews and feta to suit your liking.
I toss in the cashews without measuring so it's easy to make to your liking.
