Feta and Cashew Salad


Fresh greens with feta and cashews with a dijon mustard and balsamic vinegar dressing.



Ingredients:

  • 1 lb spring mix greens
  • 1 cup feta cheese, crumbled
  • 1 cup cashews
  • 1/3 cup egg substitute
  • 1/4 cup sugar
  • 1 Tablespoon dijon mustard
  • 2/3 cup balsamic vinegar
  • 1/2 Spanish onion, chopped
  • 2 cups canola oil

Method

Put lettuce in large salad bowl. Lift and toss lettuce to evenly mix in feta and cashews. Put next five ingredients in food processor fitted with a steel blade and process for one minute. With processor running, slowly add oil in a slow steady stream until evenly blended. Pour dressing over salad, toss, repeat.

Notes: You can add more or less of the cashews and feta to suit your liking. I toss in the cashews without measuring so it's easy to make to your liking.
