More than almost any other ingredient, the dressing sets the tone for a salad. Probably the most popular dressing is the vinaigrette, a simple mixture of oil, vinegar, and herbs. Creamy dressings, made with mayonnaise, sour cream, yogurt and similar bases, stand up to more intense ingredients like romaine lettuce and spinach. Heavy dressings also help a salad to stand up to richly flavored entrees, like beef.
