A delicious salad or dessert made with apricot Jello, yogurt, whipped topping and apricots.
Drain apricots, reserving syrup. Add water to syrup to measure 1 cup and set aside. Puree apricots in blender or food processor. Dissolve Jello in boiling water, add apricot syrup, and chill until consistency of thick egg whites. Stir in pureed apricots and yogurt until well blended. Gently fold in whipped topping and pour into a lightly oiled 6 cup mold. Chill until firm, unmold and serve.
