Confetti Pepper Salad

Thin strips of green, yellow, orange and red sweet bell peppers are tossed with a dressing of olive oil, red wine vinegar, a little sugar, salt and pepper.
Ingredients
- Bell peppers -- 2 green, 1 yellow, 1 orange, and 1 red, washed, cored and seeded
- 1/4 cup red wine vinegar
- 1 Tablespoon granulated sugar
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon coarse-ground black pepper
- 3/4 cup extra-virgin olive oil

Method
Slice all the peppers into strips about 1/4-inch wide. Place into glass serving dish. In a food processor, place the vinegar, sugar, salt and pepper; blend together. Then add oil in a slow stream, blending until add oil is added. Pour dressing over the peppers and toss until coated. Serve immediately.
Notes: This salad is very colorful and so simple.
