Chili Melon Salad


Cantaloupe cubes, pineapple tidbits and banana slices are combined with small cooked shrimp, and drizzled with a cooked syrup of honey, lemon juice, green chilies, and pecans. The mixture is piled into a melon half to serve.



Ingredients:

  • 1 large cantalope
  • 1 cup pineapple tidbits
  • 1 cup sliced banana
  • 1/2 cup pre-cooked tiny shrimp
  • 1/2 cup pecans, coarsely chopped
  • 2 tbs. butter
  • 2 tbs. honey
  • 1 (4 oz.) can chopped green chilies
  • 1/4 cup lemon juice

Method

Create a 'melon bowl' by cutting the cantaloupe in half. Discard seeds. Cut V's all around one of the cantaloupe halves in order to make a 'crown.' Remove the rind from the other half of the cantaloupe. Cut the melon into 1-inch chunks. Combine cantaloupe chunks, pineapple, banana, pecans and shrimp. Melt butter in saucepan. Stir in honey, chilies, and lemon juice. Simmer for 10 minutes. Cool, away from heat, for 20 minutes. Pour over fruit & shrimp and stir to coat. Heap this into the melon crown and serve.
