Chicken Chow Mein Summer Salad

Only four ingredients and dinner is served: broccoli slaw, chicken, chow mein noodles and poppyseed dressing.
 

Ingredients

  • 12 oz bag broccoli slaw
  • 8 tablespoons poppyseed dressing
  • 1 chicken breast, chopped
  • 1 1/2 cup fried chow mein noodles

Method

Saute chicken breast. Let cool and chop into pieces. Mix broccoli slaw and dressing a bowl and stir. Mix in broccoli and chicken. Toss broccoli slaw mixture with fried chow mein noodles.

 

Notes: I like to serve this with either almonds or grape slices, sprinkled on top, just before serving.
