Chick Pea Salad

This salad has plenty of fresh vegetables and makes a very protein rich snack.
Ingredients
- 2 cans chick peas, drained
- 1 large tomato, chopped
- 1 large cucumber, chopped
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 2 tablespoons sugar
- 1/2 cup fresh cilantro
- 1 tsp minced jalepeno
- 1/2 cup shredded carrots

Method
Stir together firt three ingredients and set aside. Make dressing with oil, vinegar, sugar, cilantro and japepeno. Pour over chick pea mixture.
