Charlene's Beaningful Salad

A healthy, colorful blend of beans, sun-dried tomatoes and herbs in a light vinaigrette.
Ingredients
- 1 8 oz jar sun-dried tomatoes, julienned (oil packed)
- 1/2 cup chopped fresh Italian parsley
- 1/2 cup chopped fresh basil
- 1 tsp fresh oregano, minced
- 1 16 oz can dark red kidney beans, drained and rinsed
- 1 15.8 oz can great northern beans, drained and rinsed
- 1 15 oz can black beans, drained and rinsed
- 1 16 oz can pinto beans, drained and rinsed
- 1/2 large red onion, halved and sliced thinly
- 1/3 cup red wine vinegar
- 1/4 cup sugar
- 1 tsp coarse salt
- 1/2 tsp dry mustard
- 1/2 tsp fresh ground black pepper

Drain tomatoes, reserving 1/4 cup oil. Place reserved oil in a small mixing bowl. Chop tomatoes and place in a large mixing bowl. Add parsley, basil, oregano, all beans and red onion to a large mixing bowl. Mix well, but gently. To small mixing bowl with oil, add vinegar, sugar, salt, mustard and pepper. Whisk until well blended. Drizzle over bean mixture and toss gently to mix. Cover and chill 2 hours to marry flavors.
Notes: I can't think of a tastier way to eat your fiber. The flavor is terrific and is so healthy for everyone.
