Cat's Mexicorn Salad

A colorful, easy-to-make salad with black beans, corn, cheese, and little bites of beef, chicken or turkey. Corn or nacho chips add extra crunch.
 

Ingredients

  • 1 16 oz can black beans, drained
  • 2 16 oz bags frozen corn, thawed
  • 4 green onions, diced
  • 1/4 cup red onion, diced
  • 1 1/2 cup shredded cheddar cheese
  • 2 cup cooked beef, chicken, or turkey meat, diced
  • 1 large jalapeno pepper, seeded and finely diced
  • 2 cups ranch dressing
  • 1 large bag chili cheese flavored corn chips or taco flavored chips, crushed

Method

Combine all ingredients in large bowl, except corn chips. Chill for one hour. Stir in corn chips just before serving.

 

Notes: Can substitute salsa for ranch dressing for a spicier version of this recipe.
