Brocolli-Bacon Salad

Smoked bacon, brocolli, onion and cheddar cheese are combined with a dressing of mayonnaise, sugar, and vinegar to create this popular salad.
Ingredients
- 4 bunches of broccoli
- 1 lb. smoked bacon
- 1 brick of cracker barrel sharp cheddar cheese
- 1/2 of a mild, sweet onion (medium size), finely chopped
- Dressing:
- 1/3 cup sugar
- 2 1/2 cups mayonnaise
- 1/8 cup (2 Tbsp.) cider vinegar

Method
Cut the stems off the broccoli and separate tops into flowerettes. Cut up the bacon into bite-size pieces; fry until crispy and drain on paper towels; set aside. Add onion, cheese, and cooled bacon pieces to broccoli. Mix together the mayonnaise, sugar, and vinegar; add to broccoli, stirring until well blended. Cover and let sit in the fridge for 1 to 4 hours before serving.
