Cut the stems off the broccoli and separate tops into flowerettes. Cut up the bacon into bite-size pieces; fry until crispy and drain on paper towels; set aside. Add onion, cheese, and cooled bacon pieces to broccoli. Mix together the mayonnaise, sugar, and vinegar; add to broccoli, stirring until well blended. Cover and let sit in the fridge for 1 to 4 hours before serving.
