A healthy side dish--broccoli with tortellini, raisins, bacon and sunflower seeds in a low fat creamy dressing.
Cook broccoli in boiling water for two minutes. Drain and immediately rinse in cold water. Cook tortellini according to package, drain and immediately rinse in cold water. In a large bowl, combine red onion, raisins, broccoli and tortellini. Combine mayonnaise, sugar substitute, and vinegar. Pour over tortellini mixture and toss to coat. Refrigerate for at least one hour. Just before serving, stir in bacon and sunflower kernels.
