Blueberry Spinach Salad

Toss baby spinach and fresh blueberries together in this unique side salad. Use high quality cheese for a rich, bold flavor.
Ingredients
- 2 bags baby spinach
- One pint fresh blueberries
- One cup frozen baby peas
- One cup shredded high quality Parmesan cheese or Feta
- Extra virgin olive oil
- Sherry vinegar
- Kosher salt
- Freshly ground pepper

Method
1. Wash spinach well. Pick off the long stems. 2. Toss with blueberries, peas, and cheese. 3. Toss well then pour over a generous amount of olive oil, a few dashes of sherry vinegar, salt and pepper.
