BLT Potato Salad

This potato salad is full of bacon and tomatoes. Perfect salad for a potluck.
 

Ingredients

  • 16 oz. dairy sour cream
  • 1 1/2 cups mayonnaise
  • 1/4 cup sugar
  • 2t. Liquid Smoke
  • 2 pounds bacon, crisp-cooked, drained and crumbled
  • 5 pounds potatoes, cleaned, chopped, boiled
  • 6 large ripe tomatoes, diced

Method

Combine sour cream, mayonnaise, sugar and Liquid Smoke. Stir in bacon. Stir together with potatoes and tomatoes.

 

Notes: Makes a large amount - for a get-together or cool summer main-dish.
