Blender Jello Mold

This dessert-salad mold combines lime gelatin with cream cheese, 7-Up and canned pineapple in the blender.
 

Ingredients

  • 1 small package lime gelatin
  • 1 cup very hot water
  • 3-4 tablespoons pineapple juice (reserved from below)
  • 1 8-oz cream cheese, softened
  • 1 teaspoon sugar
  • 1/2 teaspoon vanilla
  • 3/4 cup 7-Up
  • 1 can crushed pineapple, drain and reserve juice

Method

In a blender, add gelatin and water; cover and blend until dissolved. Add reserved pineapple juice, cream cheese and sugar. Blend until liquified, then stir in 7-Up and crushed pineapple. Place in mold and refrigerate until firm, 4-5 hours.
