Black, White and Red Potato Salad

Great flavors, lovely to look at, and easy, all you do is boil potatoes and toss in beans and flavors like garlic and tarragon.
 

Ingredients

  • 10-12 medium red potatoes
  • 16 oz can black beans
  • 16 oz can red kidney beans
  • 1 cup Fat Free Miracle Whip Salad Dressing
  • 1 Tbsp dried tarragon
  • 2 tsp garlic powder
  • Fresh ground pepper and kosher salt to taste
  • Baby spinach, rinsed and drained
  • Low-fat cheese, such as feta for serving
 
Method

Wash and cube red potatoes, do not peel. Boil in salted water until tender. Chill for at least 1 hour before mixing salad. Rinse, drain thoroughly, and chill (15 minutes) red and black beans. Mix chilled potatoes and beans with salad dressing, tarragon, garlic powder. Add kosher salt and ground pepper to taste. Chill before serving. Serve on a bed of baby spinach sprinkled with feta cheese.

 

Notes: Also great as a simple side for a picnic. This is a fantastic LOW FAT/LOW CAL alternative to traditional potato salad. My sons and husband LOVE it! Ssshhhh - don't tell them it's good for them! It is best to chill the potatoes and beans prior to mixing to help maintain the consistency of the boiled potato. If they begin to crumble while mixing, try chilling a bit longer. The salad is most visually appealing when the red, black, and white are distinguishable.
