Black Bean Salad

This bean and white corn side salad can also be used as a dip for tortilla chips. Add some chopped tomato and avocado, if you wish.
 

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, chopped
  • 4 scallions or green onion, chopped
  • 1 can white corn, drained
  • 1 tsp chopped cilantro
  • 1 tbsp Dijon mustard
  • Juice of one lime (about 2 Tbsp.)
  • 1/4 cup balsamic vinegar
  • 1 tbsp olive oil
 
Method

Combine beans, pepper, onions and corn in a bowl. In a separate bowl, combine cilantro, mustard, lime juice, vinegar and olive oil. Whisk together and pour over bean mixture. Refrigerate at least 2 hours, stirring once or twice, to blend flavors.
