A salad to make when you are growing tired of making lettuce salads. Change it up a bit with this. Lots of protein too!!

  • Servings: 4
  • Prep Time: 10 minutes
  • Total Time: 10 minutes

Ingredients:

1 can Kidney Beans, drained and rinsed in cold water
1 can Canneli Bean, drained and rinsed in cold water
1 cup Fresh or Frozen Peas, thawed if frozen
1 Tomato, chopped
½ An English Cucumber Sliced In Half Long Way & Then In 1/4" Slices
1 Small Onion, chopped,
2 Green Onions, chopped*
Dressing
3 tsp Red Wine Vinegar
Juice of 1/2 a Lime
2 tsp Olive Oil
1 tsp. bottled Minced Garlic
½ tsp Kosher Salt
½ tsp Fresh Ground Black Pepper
½ tsp Sugar, optional
1 tsp Cilantro, finely chopped
*with This Salad There Is No Need To Worry Over a Missing Ingredient or Two.
Just Substitute What Ever Veggies You Have On Hand, serve cold and it should be fine with this dressing.

Directions:

mix veggies in medium bowl. In another bowl whisk dressing ingredients together until well blended. Add to veggies and toss. Fresh and tasty! Great with fish or chicken!
