Bacon Mayo Potato Salad

The grease from the bacon is mixed with mayonnaise to form a creamy sauce that is the perfect finish for this traditional side dish.
 

Ingredients

  • 3 cups diced cooked potatoes
  • 1 cup diced celery
  • 2 hard cooked eggs, chopped
  • 1/2 cup chopped onion
  • 6 slices crisp bacon, cut into small pieces, freeze for a short time to make it easier to cut
  • 1-1 1/2 cups mayonnaise
  • Hot bacon fat

Method

In a medium bowl, add potatoes, celery and eggs. Fry bacon pieces until browned and crisp. Remove with slotted spoon to paper towels to drain. Mix mayonnaise and bacon fat until mixed thoroughly and smooth. This will take a few minutes, just keep stirring. Stir chopped onion into potato bowl then add bacon pieces to potato mixture. Pour mayonnaise mixture over salad and toss lightly. Chill before serving.
