Bacon and Grilled Peach Salad

A classy starter salad with a blend of sweet, bitter and salty flavors.
Ingredients
- 2 slices bacon
- 1/4 cup almonds
- 1 peach
- 1/2 cup arugula
- 1/2 cup spinach
- 1 cup balsamic vinegar
- 1/2 cup olive oil

Method
Wash and dry fresh spinach and arugula. Place balsamic vinegar in a small saucepan and reduce by 2/3 then let cool. Lay bacon out on a sheet pan, lined with parchment paper, and bake at 325 degrees until crisp. Remove bacon and crumble. Reserve some bacon grease and toss with almonds. Lay almonds out on a sheet pan and toast in oven. Wash peaches and quarter. Brush lightly with olive oil and grill until marks appear. Serve crumbled bacon, sliced peaches and almonds over greens drizzled with olive oil and reduced balsamic vinegar.
