Bacon and Bean Salad

A savory mix of beans, corn, spinach and bacon with a red wine vinaigrette.
 

Ingredients

  • 4-6 slices thick cut bacon
  • 1 can black bean
  • 1 can garbanzo beans
  • 1 can pinto beans
  • 1 red onion
  • 2 ears corn, cooked and shucked
  • 1 10 oz bag spinach
  • 4 cloves garlic
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Method

In a pan on stove top, cook bacon until crispy over low heat. Drain on paper towels when done. Pour bacon grease into a small bowl, though a fine mesh stainer, and reserve fat. Clean sediment out of pan and heat on stove. Dice garlic and add to hot pan, then add spinach, toss until wilted, then remove and drain any liquid. Dice red onion to a very small dice. Drain beans and rinse them in a strainer. Combine all ingredients in a bowl and adjust seasoning with salt and pepper. Best served chilled.

 

Notes: You can add a spicy pepper to give it more heat.
