Avocado Avalanche


This bowtie pasta salad is loaded with good things--chicken, avocado, tomato, onion and pine nuts in a creamy dressing.



Ingredients:

  • 1 16 oz package bowtie pasta
  • 4 precooked chicken breasts, skinned and boned
  • 2 teaspoons olive oil
  • 1 medium yellow onion, chopped
  • 1 medium tomato, chopped
  • 3 avocadoes, cut in cubes
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup pine nuts
  • 2 teaspoons celery salt
  • Salt and pepper to taste

Method

Cook bowtie pasta according to package directions. Drain when cooked and set aside. Cut chicken breasts into one inch pieces. Heat medium size skillet on medium and add onion. Cook until just done. Place on paper towel to drain oil and set aside. Place pasta, chicken, onions, tomato, avocados, and lemon juice in large bowl and toss together. Sprinkle with celery salt and stir. Add mayonnaise, mustard and stir until incorporated. Toss on pine nuts and season with additional salt and pepper, if desired.

Notes: Note: Do not add pine nuts until ready to serve. This may be prepared ahead of time and place in refrigerator until ready to eat.
